What technique do you use to remember the score, and who
will serve, especially after a long and exciting rally ?
For me, I always lost the memory.

One technique that I find helpful is to say out loud the score. This way all four of us can know the status. For example, "4-7 second serve", "13-0 first serve", and so on.

Not just that, but to correctly measure the score... remember who served the very first point, that way, when you look back at them, you can see whether they're standing on the odd numbered side, or the even numbered side. Similar to singles... just count back and fourth 1,2,3,4, depending on where the person is... plus I don't think everyone forgets... I'm sure if you forget someone else will remember. B)
