At some universities, I see that they string it differently than local stringers. They leave one of the top portion and bottom portion of the grommet unstrung. What is the advantage of playing with a racquet like that? I hope you understand what I mean.

Yep, no string goes through it at the top portion and the bottom portion, just above/below the square bed area. Hope that makes sense.
no matter how i parse your sentence: i cannot see any evidence in the picture of having "grommet unstrung". by that, i understood it as no string(s) goes through some of the grommets. i think he is referring to skipped crosses. its a method used to adjust the size of the sweetspot, and to move the sweetspot around.
By not stringing the top and bottom cross strings, will provides greater repulsion power. But one miss hit at the top, your strings will instatntly snap and the shuttle may get stuck between the main strings.
