I wish I could know everything. Because if I knew everything, presumably, I'd know how to do anything and therefore, be able to do whatever I wanted. But I'd also know what I wanted and what I had to do and the deterministic order of things, and life would lose all of it's mystery and entertainment... crap.

I wish I could speak every language. I would be able to talk to everyone, and learn some badminton moves from people I wouldn't normally be able to talk with.
Well that depends. Basic procedure, with an example of something I've done: 1. Identify something specific you want to change in the world (save the trees). 2. Narrow it down (save the elm trees). 3. Learn about the threat (elms are threatened by the invading Elm Bark Beetle which causes them to be infected by Dutch Elm Disease) 4. Join/volounteer for/create an organization to fix this (join Coalition to Save The Elms) 5. With the help of others, figure out what you can do (band elm trees to protect against immune degradation) 6. Fundraise (bake sales, socials, contacting companies, to purchase supplies) 7. Go do it! Gotta start small to go big!
And it's not all about trees either. Go up north to Johor and volunteer to help the flood victims at the disaster relief centres and you would've made a great difference. Or help feed the homeless - it's the little little things that matter, not the one big publicised ones that only happen once in a while.
