when doing the long side do you still follow the standard yonex pattern and skip b10,b11 go through 12 and come back to 10 before starting crosses. or do you keep going and come back through b12 . i assume the short side you finish same as 2 piece.

The only other way for 1 piece (than standard pattern) is stringing it "around the world". If you are not experienced at this technique then don't try it.

I suggest two piece for Yonex racquets though.

How about the Gosen-Haribito and Victor ?
It is also 1-piece stringing pattern.

Haribito will just go line by line it goes up from 10 and comes down on 12.
With regarding to the "around the world" it has one criteria, the cross string count between top main 10 and bottom main 12 has to be an even number. If it is an odd number you will run into a hack of trouble to get around it.

NO, around the world more or less starts the cross from the upper middle of the racket to the lower middle of the racket then goes up and finish the upper portion, then the other end used to stay up will go down and complete the rest. Top down or down top it is all personal preference, no set rule.
